Autumnal Anticipation Porter

A celebration of autumn and an anticipation of winter's darkness, this American Porter is rich and robust, with notes of chocolate, caramel, and a hint of spiced warmth, perfectly balancing the slightly bitter hop character. Its deep mahogany color and creamy head are as inviting as a crisp autumn evening.

Instructions

  1. Heat 18 liters of water to 72°C and add grains for mashing. Rest at 67°C for 60 minutes.
  2. After mashing, sparge with 8 liters of water at 75°C to collect 19 liters of wort.
  3. Bring wort to a boil and add 25g of Cascade hops. Boil for 60 minutes.
  4. Add 15g of Centennial hops at 15 minutes left in the boil.
  5. Add 15g of Northern Brewer hops at 5 minutes left in the boil.
  6. Cool wort quickly to 20°C and transfer to a fermenter. Top up with water to reach 15 liters if necessary.
  7. Pitch the yeast and ferment at 19°C for 2 weeks.
  8. Bottle or keg with priming sugar for carbonation and condition for an additional 2 weeks before enjoying.
